This mold reduces the water content in the grape and therefore concentrates the sugars and aromas, giving Le Muffe a taste with a particular and unmistakable style. The grapes are harvested manually several times in relation to the attack of Botrytis Cinerea. After transport to the cellar, the bunches are further selected.
