TERRITORY AND VINEYARD
Yield per hectare:Â 80 quintals of grapes.
PRODUCTION
Winemaking: the selected grapes that arrive in the cellar are subjected to a low temperature maceration treatment, about 10°C for 8 hours, through which the varietal characteristics are enhanced. Subsequently, through a soft pressing of the whole grapes, a maximum yield of 60% must is obtained. The first part of the fermentation is carried out in steel at a controlled temperature, towards the end, about 30% of the product is moved to barriques where the fermentation will finish and it will be refined for a few months.
TASTING NOTES
Color:Â shiny gold with greenish reflections.
Perfume:Â intense and composite, with memories of exotic fruit, notes of vanilla and mineral hints.
Taste:Â savory, soft but round, of notable fullness with a pleasant aftertaste of ripe apple and almond with a long persistence.
Pairings:Â mollusc and crustacean appetizers. First courses and second courses based on fish, white meats, sheep's cheeses, fried foods and Sushi.
