TERRITORY AND VINEYARD
Yield per hectare: 50 quintals of grapes.

PRODUCTION
Winemaking: Botrytized grapes are harvested at the beginning of November, to allow the morning mists to favor the development of Botrytis Cinerea or “noble rot” on the bunches. This mold reduces the water content in the grape and therefore concentrates the sugars and aromas, giving Le Muffe a taste with a particular and unmistakable style. The grapes are harvested manually several times in relation to the attack of Botrytis Cinerea. After transport to the cellar, the bunches are further selected. A light crushing follows, then after a soft pressing the must ferments for 18 days at a temperature of about 17°C and is then left to rest before being marketed.

TASTING NOTES
Color: shiny gold with burnished reflections.
Perfume: intense, with notes of jasmine, resin and cinnamon.
Taste: sweet, aristocratic, soft and elegant.

Pairings: It goes well with mature or blue cheeses and especially with goose liver pâté.
